Berry & Honey + Herb Goat Cheese Toast

Move over avocados, there's a new toast in town.


Make no mistake. I freaking love avocado toast. As someone who truly dislikes most breakfast foods (sorry, not sorry), that's my usual go-to when out to brunch with friends.


BUT, this mixed berry toast is off the charts good.


Slightly mashed up blackberries and raspberries, honey, lemon juice + zest and fresh mint over the top of toasted french bread and the most delicious honey + herb goat cheese spread. Mmmm...YUM!


Serve it for breakfast, lunch, dinner, appetizers - heck even have it as a snack! It's good at all times of the day, folks.

Berry & Honey + Herb Goat Cheese Toast

Prep Time: 10 minutes

Total Time: 10 minutes

Servings: 8-12 (depends on what you're making it for and how large the bread is)


INGREDIENTS:


Mixed Berry Topping:

6oz fresh blackberries, washed

6oz fresh raspberries, washed

1 tsp fresh lemon juice

1 tsp lemon zest + more for garnish

2 tsp honey + more for garnish

8-10 fresh mint leaves to garnish, julienne


Honey + Herb Goat Cheese:

8oz softened goat cheese

1 Tbsp honey

1 Tbsp mixed herbs (rosemary + thyme)


Toasted Bread:

French bread, or any kind of bread you prefer, sliced thin

butter or olive oil


INSTRUCTIONS:

  1. Butter sliced bread on one side and bring and heat a large pan over medium heat on the stove.

  2. When the pan is hot, add bread slices, buttered side down, and cook until golden brown, about 3-4 minutes. Once golden brown, flip the bread over to slightly toast the unbuttered side. This should only take about 1 minute. Remove bread from pan and set aside.

  3. To make the Honey + Herb Goat Cheese, place softened goat cheese in small mixing bowl and add herbs and honey. Mix together until all ingredients are thoroughly combined.

  4. To make the Mixed Berry Topping, add blackberries and raspberries to a mixing bowl. Using a fork or whisk, start to mash up the berries. You want to retain their shape but also want to mash them just enough to release some of those delicious juices. The raspberries will break up more than the blackberries.

  5. Add lemon zest, lemon juice and honey to the bowl and give it a quick stir just so that everything is incorporated.

  6. To assemble the toast, apply a layer of goat cheese spread, top it with the berry mixture and then garnish with additional lemon zest and a drizzle of honey.
