Goat Cheese with Mixed Berry Compote

Goat cheese with a berry sauce. That's what this is and it's absolutely delicious. Super simple to make, perfect for summer and definitely a crowd pleaser. An appetizer worth making again and again and again!

Goat Cheese with Mixed Berry Compote

Prep Time: 5 minutes

Cook Time: 15 minutes

Cooling Time: 5-10 minutes

Total Time: 30 minutes

Servings: 6-12


INGREDIENTS:


8oz softened goat cheese log

1 cup fresh blackberries, washed

1/2 cup fresh blueberries, washed

1/2 cup fresh raspberries, washed

1/4 granulated sugar

1 Tbsp lemon juice

3 Tbsp water

1 Tbsp

cornstarch (optional)


INSTRUCTIONS:

  1. Combine berries, sugar, water and lemon juice in a sauce pan over medium heat, stirring frequently.

  2. Cook until berries are soft and liquid is reduced.

  3. Transfer mixture to blender and blend until smooth.

  4. If after blending your berry mixture is loose, return to sauce pan over medium heat. Whisk together 1 tsp of cornstarch and 1 tsp water in a small bowl. Slowly add to the mixture, while stirring, until consistency is to your liking.

  5. Allow mixture to cool slightly, pour over plated goat cheese log and serve with crackers!
