Guacamole Chicken Burgers with Jalapeno Chips
Is there anything better than burgers in the summer? Nope.
When I think of summertime favorites, burgers are it.
Chicken burgers might not be the All-American classic like their beef patty counterparts, but they definitely hit the spot on those super sunny days. And guys, these burgers are so dang GOOD.
The patties are full of flavor. The guacamole adds an extra layer of deliciousness. The jalapeno chips add the perfect amount of crunch and spice. And those buns {insert heart-eye emoji here}. Dave over at Dave's Killer Bread knows what's UP. They've basically taken the best bread ever - their 21 grains & seeds - and turned it into the best burger buns ever. SMART.

Guacamole Chicken Burgers with Jalapeno Chips
Prep Time: 20 minutes
Cook Time: 12-15 minutes
Total Time: 35-40 minutes

INGREDIENTS:
Chicken Burgers
1lb ground chicken
3 Tbsp bread crumbs (I used Italian-style)
1 Tbsp mixed herbs, minced (oregano + rosemary + thyme)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
Swiss cheese slices
Canola Oil
Hamburger Buns - I used Dave's Killer Bread 21 Grains & Seeds Buns
Jalapeno Chips
2 jalapenos, cut into rounds, seeds and membrane removed
2 Tbsp all-purpose flour
1/4 tsp paprika
salt + pepper
Canola Oil
INSTRUCTIONS:
Heat the grill, or heat a pan on the stove, to a medium-high heat.
To make the burger patties, add ground chicken, bread crumbs, herbs, salt, pepper and garlic powder to a mixing bowl. Using your hands, combine everything together. Divide the mixture into four equal portions and shape into patties. Place/stack patties on a plate, using wax paper to separate them.
Prior to cooking the patties, lightly oil each side.
Add the patties to the hot grill or pan. Cook until meat is cooked through, about 5-6 minutes per side. After you flip the patties, add the Swiss cheese. It should be melted by the time the patties are done cooking.
While the patties are cooking, make the jalapeno chips. Combine flour, paprika, salt and pepper in a small bowl. Toss with a fork. Add jalapeno rounds to flour mixure and toss until fully coated. Heat oil (2-3 Tbsp) in a pan over medium-high heat. Add floured jalapenos to oil and cook until golden brown. They will cook fast so watch carefully!
To assemble burgers, layer guacamole and jalapeno chips over chicken patties. I added quick-pickled red onions for extra flavor - and it was awesome!
