Hold The Bun Lamb Burgers with Feta and Bruschetta
It's Labor Day Weekend! The end of summer, sure, but the start of almost-Fall and I'm loving it. If you're firing up the grill this weekend - like me! - make sure you've got something good cooking!
Let me introduce you to my new favorite: Hold the Bun Lamb Burgers. If you've never had a lamb burger, you're missing out. This ultra lean alternative to beef makes for incredibly delicious burgers that are full of flavor. Topped with both the whipped feta and pepper + tomato bruschetta just makes for a dynamite meal, guys.

Speaking of this bruschetta...this can be used on top of anything. Made with my favorite Mama Lil's Peppers, it's so delicious and would make for a great appetizer - when parties are allowed again. :) Bonus: Costco now sells a GIANT jar of these peppers. Run there now and pick some up.

Could you make these the traditional way with buns? Sure. Of course. I just don't think it's necessary. Save on the carbs and pair this with my Arugula & Orzo Salad with Olives and Artichokes - so yummy!

Hold The Bun Lamb Burgers
with Whipped Feta and Bruschetta
Prep Time: 25 minutes
Cook Time: 10 minutes
Total Time: 35 minutes
Servings: 3-4
INGREDIENTS:
Lamb Burgers:
1lb ground lamb
1/4 tsp onion powder
1/4 tsp cayenne pepper
3 garlic cloves, minced
1 Tbsp lemon juice
1 Tbsp fresh herbs (oregano + thyme + rosemary)
salt + pepper
Whipped Feta:
1/2 cup greek yogurt
4oz crumbled feta cheese
1 spring of fresh thyme
2 tsp honey
salt + pepper
Pepper + Tomato Bruschetta:
1/3 cup Mama Lil's Peppers, diced
1/2 cup cherry tomatoes, diced
2 garlic cloves, minced
1 tsp fresh herbs, minced (oregano + thyme)
2 tsp olive oil
Serve with Arugula & Orzo Salad with Olives and Artichokes
INSTRUCTIONS:
To make the burgers:
In a large mixing bowl, combine lamb with onion powder, cayenne, garlic, lemon juice, fresh herbs and a pinch of salt and pepper. Mix together with your hands until everything is well incorporated. Form into 3-4 equal patties and set aside until ready to use.
Either grill on your barbecue or cook on the stove top with some olive oil over medium heat. You want these burgers to have some pink on the inside, so cook to about a medium. It should take about 4 minutes per side, but be sure to check with a fork or knife prior to serving.
To make the whipped feta:
Combine all ingredients in a small food processor and blend until smooth. If the mixture is a little thick, okay to add a tablespoon of water. Taste and season with salt and pepper. Store in fridge until ready to use.
To make the bruschetta:
Combine all ingredients in a small bowl and mix until everything is well incorporated.
To assemble your burgers:
Layer whipped feta over cooked lamb burgers and then top with bruschetta. I also like serving these over a bed of arugula OR, what I really suggest, is making that Arugula & Orzo Salad with Olives and Artichokes for some added Mediterranean flavors.
