Mediterranean-Inspired Orzo Salad
Guys: this salad is next level kind of stuff. It's just one of those things that goes well with everything. It's also just really good by itself. We're talkin' olives, tomatoes, feta cheese, peppery arugula - I mean, what more do you need?! Oh! I know! A homemade lemony dressing with fresh rosemary and thyme!
I'm calling it Mediterranean-inspired 'cause these flavors bring back some serious memories of my cruise through the Greek islands. I wish I was there now...but alas, COVID.
This one's a good summertime staple, people! Make it tonight!

Mediterranean-Inspired Orzo Salad

Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 4
INGREDIENTS:
3/4 cup dried Orzo
3 Big Handfuls of Arugula
1/2 Pint Red Grape or Cherry Tomatoes, halved
1/2 Pint Yellow Grape or Cherry Tomatoes, halved
1/3 cup Kalamata Olives, pitted and halved
1/4 cup Mama Lil's Peppers, diced
1/2 package of crumbled Feta Cheese
1 Lemon, juiced
4 Tbsp Olive Oil
1 Tbsp fresh rosemary + thyme, finely diced
Salt + Pepper
INSTRUCTIONS:
Cook orzo per the directions on the packaging.
While orzo is cooking, cut up tomatoes, olives and peppers.
Make dressing by combining lemon juice, olive oil, rosemary + thyme. Add salt + pepper to taste.
In a large bowl, combine orzo, arugula, tomatoes, olives, peppers and feta cheese. Toss with dressing and serve!
