Oregon Summer Berry Salad

The pear might Oregon's official fruit but I'm all about the berries in the summertime. Fresh fruit stands and u-pick farms; that's what I think of when I think of summers in the Willamette Valley.


This salad combines some of my favorites with a fresh lemon dressing and goat cheese. Mmmmm. Goat cheese, lemons and fruit: a winning trio.

Oregon Summer Salad

Total Time: 10 minutes

Servings: 4


INGREDIENTS:


Arugula, 3 handfuls

1/2 Cup Whole Blackberries, cut in half

1/2 Cup Blueberries

1/4 Dried Cranberries

1/2 Red Bell Pepper, diced + chopped

1/2 Orange Bell Pepper diced + chopped

1/4 Cup Slivered Almonds

2oz Goat Cheese Crumbles (half of container)

1 Lemon, Juiced

3 Tbsp Olive Oil

1 tsp Fresh Oregano + Fresh Thyme, finely minced

Salt + Pepper


INSTRUCTIONS:

  1. In a large bowl, combine arugula, fruit, bell peppers, goat cheese and almonds.

  2. Whisk together lemon juice, olive oil, oregano + thyme, salt + pepper.

  3. Pour dressing over the top of salad and toss to thoroughly combine.
