Loaded Veggie + Spicy Pork Udon Stir Fry
Looking for ways to load up your meals with veggies? Stir fry's are a great way to do that - ESPECIALLY in the summer when fresh vegetables are everywhere!
I'm not sure how traditional this stir fry is, but it's good. Loaded with all kinds of veggies, spicy pork and udon noodles - my favorite! - this one is a real winner in my house.

Loaded Veggie + Spicy Pork Udon Stir Fry

Cook Time: 25 minutes
Total Time: 40 minutes
Servings: 4-6
INGREDIENTS:
Stir Fry Sauce:
1/3 cup low-sodium soy sauce
1 heaping Tbsp hoisin sauce
2 tsp packed brown sugar
1 tsp rice wine vinegar
1/2 tsp sesame oil
Stir Fry:
2-7-ounce packages instant udon noodles, seasoning packets discarded
1lb ground pork
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 orange bell pepper
2 large carrots, ribboned or thinly sliced with a vegetable peeler
1/2lb broccolini, washed + stalks and florets divided
1 cup sugar snap peas, ends removed + halved
2 tsp serrano pepper, minced
1 shallot, minced
1 Tbsp lime juice
2 heaping Tbsp hoisin sauce
2 Tbsp gochujang (Korean chili paste)
2 Tbsp vegetable oil
2 garlic cloves, minced
cilantro, minced (garnish, optional)
peanut, crushed (garnish, optional)
salt + pepper
INSTRUCTIONS:
In a small mixing bowl, whisk together all stir fry sauce ingredients and set aside.
Prepare all vegetables and set aside.
Heat vegetable oil in a large pan over medium heat. When oil shimmers, add minced serrano, shallots and garlic. Cook until fragrant, about 2 minutes.
Add ground pork, break up with spatula or wooden spoon and season with a pinch of salt and pepper. While pork is cooking, add gochujang, lime juice, 1 Tbsp of the stir fry sauce and 1 Tbsp of the hoisin sauce. Stir to thoroughly combine. Cook until pork is no longer pink, about 5-7 minutes.
When pork is cooked through and you can't see any pink, add all vegetables, 2 Tbsp of the stir fry sauce and 1 Tbsp of hoisin sauce. Stir to thoroughly combine.
Saute vegetables until softened, about 5-7 minutes.
While vegetables are cooking, prepare the udon noodles. Remove from packaging and run noodles until hot water to break up.
Add noodles to pan with pork and veggies. Add in the remaining sauce and stir everything together so that it's well combined. Saute for additional 5 minutes.
Remove from heat, divide into bowls and top with cilantro and crushed peanuts.
